A perfect course for a fresh and fruity rosé wine. In south France they know that rosé wine with fried fish with flavour full accessories is a perfect combination.
The reason why rosé wine fits so perfectly is the combination of freshness and the spicy flavour that is there because the skin has been on fore a few hours in the ferment process. This has given the delicate pink colour and contributes to the refreshing spicy after taste.
Now there are more good rosé wines than ever on the market and I recommend especially two of them that goes well with plaice: Langman Schilcher Klassikk 2005/2006 Weststeiermark, Austria 109Nok number 10218 A fresh and fruity rosé that is characterized by raspberries and currants both in flavour and odour. Château *D’Aqueria 2005 Rhône, France 167Nok, number 7595 A classic rosé from southern France that, in addition to a fresh and fruity taste which reminds of red berries, tastes of herbs and a hint of anis.
