Spanish food and Spanish bubbles

Tapas, Spanish small courses consisting of ham, seafood and other nice things, are becoming very popular among Norwegians. It is the perfect food for a party or long, romantic summer nights.
Article imageTapas may consist of lots of different food, both warm and cold. Popular ingredients are ham, cheese, olives and different types of seafood. Garlic is one of the main ingredients, and the food is very rich of flavour and spices. An exiting and good companion for this food is a Spanish cava. Cava – the Spanish Champagne

Cava is a name for Spanish sparkling wine which is produced by the same exclusive method as Champagne. The procedure includes that the wine gets to ferment the second time on the bottle. This gives better bubbles and a fresher character than if the wine is fermenting in a tank.

Albondigas, Spanish meatballs in a spicy tomato sauce

Meatballs:
600g minced meat
1 egg
1ts fresh chopped red chilli
1 small bunch of fresh chopped coriander
2 cloves of garlic
3 slices of crust less white bread
Blend everything in a foodprocesor and flavour with salt and black pepper.
Make little balls and fry in a frying pan

Tomato sauce:
2 cans of crushed tomatoes
2 tbs of tomato puree
1 clove of garlic
2 shallots
A bit of coriander
Chop the onion an fry carefully in a casserole with some oil. Add the tomato puree and the tomatoes, let boil for 10 minutes before adding the meat balls. Flavour with salt, pepper and olive oil.

Alioli

2 yolks
1tbs dijon mustard
1tbs white wine vinegar
3dl grape seed oil
1 clove of garlic
Salt and pepper
Blend the yolks, vinegar, mustard, salt and pepper in a bowl. Add the oil carefully to the mixture (make sure that the eggs and oil are the same temperature.
Blend until you have a thick alioli.
